Storage
Whole heads in a dark, dry, ventilated spot — never the fridge, where it sprouts. Peeled cloves keep 1 week refrigerated in oil-free containers.
Shelf life
Whole head: 3–6 months. Broken head: 2–3 weeks. Peeled: 1 week.
Seasonality
Harvested midsummer; fresh "green garlic" appears in spring. Cured garlic is excellent year-round.
Shopping tips
Choose firm, heavy heads with tight skin. Avoid sprouting, soft spots, or a musty smell.
Nutrition
Rich in allicin, manganese, and vitamin B6. Most of its compounds activate when crushed and rested for a minute before cooking.
