Cuts, doneness, resting, and why the same animal gives you both a two-minute steak and a four-hour braise.
Section 01
The map of the animal
Muscles that work hard are tough and flavorful; muscles that do little are tender and mild. That single principle predicts almost everything about how a cut should be cooked. Legs and shoulders move constantly, so they are full of collagen and need long, moist heat. The loin along the spine does almost nothing, so it is tender and wants fast, dry heat.

Chef's tip
Ground beef is different from whole cuts. Grinding mixes surface bacteria throughout, so the center must reach 71 °C. A rare steak is safe; a rare burger is a calculated risk.

Searing well

Dry the surface thoroughly and salt at least 45 minutes ahead — or immediately before. The window in between is the worst time.

Get the pan genuinely hot. Cast iron or carbon steel, ripping, with a high-smoke-point oil.

Lay the steak down away from you and leave it alone for 2–3 minutes.

Flip once for a thick steak. Add butter, garlic, and thyme in the last minute and baste continuously.

Pull 3–4 °C below target and rest on a rack, not a plate, so the underside does not steam.

The reverse sear
For steaks thicker than about 4 cm, the reverse sear is superior. Cook the steak in a low oven (110 °C) until it is 10 °C below target, rest it briefly, then sear it hard for sixty seconds a side.
Because the interior comes up slowly and evenly, you get edge-to-edge pink with almost no grey band, and a drier surface that sears faster and better than a fridge-cold one.

Resting and slicing
Rest steaks about half their cooking time, minimum five minutes, on a rack. The muscle fibers relax and reabsorb moisture that would otherwise pour onto the board.
Then find the grain and slice across it. On coarse-grained cuts like flank and skirt this is not a refinement — it is the difference between tender and chewy, and it matters more than anything you did with the heat.

Aging, briefly

Wet aging (vacuum-sealed, 2–4 weeks) tenderizes through enzyme action with no flavor change. Most supermarket beef is wet aged.

Dry aging (open air, controlled humidity, 3–8 weeks) concentrates flavor through moisture loss and adds nutty, funky depth. Expensive because of the trim loss.

Neither substitutes for correct cooking, and neither rescues a cut cooked the wrong way.

Buy a probe thermometer. It is the cheapest upgrade to your cooking that exists.

A thick steak cooked properly feeds more people better than two thin ones.

Save beef trimmings and bones for stock — brown them hard first.

Let steak come toward room temperature for 30 minutes before searing, but do not leave it out for hours.

Common mistakes
Cooking a lean tender cut low and slow, or a tough collagen-rich cut hot and fast.
Salting 10 minutes before cooking — the worst possible window.
Flipping a steak constantly and never building a crust.
Slicing with the grain on flank or skirt.
Resting on a plate so the bottom sits in liquid and goes soggy.
Judging doneness by poking instead of measuring.
