White meat and dark meat are different ingredients
Breast is lean, low in connective tissue, and cooks fast — it is done at 65 °C and dry by 74 °C. Thigh and leg are fatty, full of collagen, and actually improve past 74 °C, staying juicy up to 82 °C as the collagen converts.
This is why cooking a whole chicken to a single temperature is a compromise, and why almost every chicken problem traces back to treating both as one ingredient.

Chef's tip
The official 74 °C guidance is instantaneous pasteurization. Breast held at 63 °C for about three minutes is equally safe and dramatically juicier.

Brining: wet versus dry
A wet brine (salt dissolved in water) adds moisture and seasons throughout, giving forgiving, juicy meat — but it also waterlogs the skin, which makes crisping harder.
A dry brine (salt rubbed on and left uncovered in the fridge) seasons just as deeply, draws surface moisture out, and leaves skin that roasts to glass. For anything where you want crisp skin, dry brine.
Dry brine: 1% salt by weight of the bird — about 10 g per kilo.
Salt every surface, including under the skin and inside the cavity.
Rest uncovered on a rack in the fridge, 12 to 24 hours for a whole bird, 4 hours minimum for pieces.
Do not rinse. Pat dry and roast.
Section 03
Breaking down a whole bird
Remove the legs: cut through the skin between breast and thigh, bend the leg back until the joint pops, then cut through it.
Separate drumstick from thigh along the white fat line on the underside.
Remove the wings at the shoulder joint.
Run your knife along one side of the breastbone, following the ribcage, to free each breast.
Keep the carcass. That is tomorrow's stock.
Chef's tip
Buying whole and breaking it down costs roughly half the price of buying parts, and you get a free carcass worth two litres of stock.

Roasting a whole chicken
Dry brine overnight, truss loosely or not at all, start at 220 °C for 20 minutes to set the skin, then drop to 190 °C until the thigh joint reads 71 °C — about 45 to 60 minutes for a 1.5 kg bird.
Spatchcocking — cutting out the backbone and flattening the bird — solves the white/dark meat problem almost entirely by making the thickness uniform. It also cuts roasting time by about a third.

Other methods, briefly

Pan-searing breast: sear skin-side down over medium for 6–7 minutes without moving it, flip, finish gently.

Poaching: gentle simmer at 80 °C gives the most tender chicken you will ever eat, perfect for salads and sandwiches.

Braising thighs: skin on, sear hard, then 40 minutes in liquid. Nearly impossible to overcook.

Frying: buttermilk marinade for tenderness and acid, double-dredge for craggy crust, oil at 165 °C.
·
Grilling: two-zone, always. Skin over direct heat renders and flares; move it to finish.

Resting and carving
Rest a whole bird 15 to 20 minutes and pieces 5 minutes. Tent loosely; wrapping tightly steams the skin you just spent an hour crisping.
Carve legs first, then remove whole breasts from the bone and slice them crosswise. Slicing on the bone tears the meat and loses juice.

Spatchcock anything you are in a hurry with. Faster, more even, and more crisp skin per bird.

Save every carcass in the freezer. Three of them make an outstanding stock.

Thighs are more forgiving than breasts in nearly every application, and cheaper.

Never wash raw chicken — it aerosolizes bacteria across your sink and counter without making anything safer.
