Cleaning as You Cook

Contents
The habit that keeps a kitchen workable and turns the end of dinner into a five-minute job.
Section 01
A clean station is a fast station
Cleaning as you go is not about tidiness for its own sake. A cluttered surface slows you down, hides the thing you are looking for, and eventually forces you to stop cooking to clear space — usually at the worst moment.
It is also a safety issue. Spills on the floor, a knife under a towel, a crowded bench beside a hot pan: nearly every domestic kitchen accident has clutter somewhere in its causal chain.
Section 02
Use the dead time
Cooking is full of gaps — water heating, onions softening, a braise in the oven, meat resting. Those gaps are exactly enough time to wash the board, wipe the counter, and put away what you have finished with.
You are not adding work; you are moving it into time that was already being spent. The total effort is identical and the experience is completely different.
1
Fill one side of the sink with hot soapy water at the start.
2
Put ingredients away the moment you finish with them.
3
Wash prep tools during the first simmer or preheat.
4
Wipe the board and counter between components.
5
Deal with spills immediately, especially on the floor.
6
Wash the last pan while the food rests.
Section 03
Cross-contamination while cleaning
·
Wash boards and knives used for raw meat immediately, before they touch anything else.
·
Use hot soapy water, and let surfaces air dry rather than wiping with the cloth you have been using all evening.
·
Dish cloths and sponges are the most contaminated objects in most kitchens. Replace or sanitize them frequently.
·
Never use the same towel for hands, spills, and hot pans.
·
Wash your hands after handling raw protein — not rinse, wash.
Chef's tip
Keep three towels: one for hands, one damp for wiping, one dry and folded for hot pans. Colour-code them if you can.
Section 04
The end-of-cooking reset
Before you sit down, take two minutes: put the last things away, wipe the surfaces, and start whatever needs to soak. It feels like a delay and it is the difference between a kitchen you want to cook in tomorrow and one you avoid.
The rule professionals use is that you leave a station the way you would want to find it. That applies exactly the same at home.
Section 05
Awkward things, quickly
·
Burnt pans: cover the base with water and a spoonful of baking soda, simmer ten minutes, then it lifts off.
·
Cast iron: hot water and a brush, dry immediately on the heat, then a thin wipe of oil. No soap needed, though a little will not ruin it.
·
Boards: scrub with coarse salt and half a lemon to deodorize and lift stains.
·
Grease: hot water and dish soap immediately beats any scrubbing later.
·
Blender: fill halfway with hot water and a drop of soap, then run it.

Chef tips
·
Fill the sink with hot soapy water before you start cooking. It is the highest-leverage thirty seconds in the process.
·
Put ingredients away as you finish with them rather than in one pile at the end.
·
Wipe as you go with a damp cloth kept specifically for that purpose.
·
Start soaking the roasting tray the moment it comes out of the oven, while it is still hot.
Avoid these
Common mistakes
Leaving everything until the end and facing a demoralizing pile.
Using one cloth for raw meat surfaces and then for everything else.
Letting a pan cool with food stuck to it.
Standing idle during simmering time.
Leaving knives in a sink of water where they cannot be seen.
Leaving spills on the floor until later.

2
Time how long the cleanup takes when you clean as you go versus when you do not.
3
Set up the three-towel system and use it for a week.
