Section 01
Oil versus water
Oil and water do not mix because water molecules are polar — they cling to each other — and oil molecules are not, so they are squeezed out into their own layer. Left alone, they always separate. Every sauce in this lesson is a way of cheating that.
An emulsion is a suspension of tiny droplets of one liquid inside the other, kept apart so they cannot recombine. Make the droplets small enough and add something to keep them apart, and the mixture behaves like a single creamy liquid.

What makes an emulsion stable

An emulsifier — a molecule with a water-loving end and an oil-loving end that parks at the boundary. Egg yolk lecithin is the classic; mustard, honey, garlic paste, and miso all work too.

Mechanical force — whisking, blending, or shaking breaks the oil into progressively smaller droplets.

Slow addition — dumping oil in all at once overwhelms the emulsifier before it can coat the droplets.

The right ratio — too much oil for the available emulsifier and water and the emulsion breaks.

Temperature control — heat can help or destroy an emulsion depending on the sauce.

Section 03
Vinaigrette: the simplest case
The classic ratio is three parts oil to one part acid, but treat that as a starting point rather than a law — a sharp sherry vinegar might want 4:1, a mild rice vinegar 2:1.
Put the acid, mustard, salt, and any aromatics in a bowl first and whisk them together. Then add the oil in a very thin stream while whisking constantly. It will thicken and go opaque as the emulsion forms.

Mayonnaise: a permanent emulsion
Mayonnaise is egg yolk, oil, acid, and salt, and one yolk can emulsify a remarkable amount of oil — around 250 ml — because lecithin is so effective. It is also where most people first experience an emulsion breaking.
The technique is the same as vinaigrette but less forgiving: start with the yolk and acid, add oil drop by drop until it visibly thickens, then stream it in. Room-temperature ingredients emulsify far more reliably than cold ones.
Chef's tip
If mayonnaise breaks, start a fresh yolk in a clean bowl and whisk the broken mixture into it drop by drop. You will rescue it every time.
Section 05
Hollandaise and warm emulsions
Hollandaise adds heat to the equation, which makes it both richer and more fragile. Egg yolks are whisked with a little acid over gentle heat until they thicken into a sabayon, then warm butter is streamed in.
Two failure modes: too hot and the yolks scramble; too cold and the butter will not incorporate. The target is warm enough to thicken the yolk, never hot enough to set it. Off the heat, over barely simmering water, whisking constantly.

The pasta emulsion
This is the one that transforms weeknight cooking. Starchy pasta water plus fat plus vigorous agitation produces a glossy sauce that clings to every strand — the difference between pasta with sauce on it and pasta properly dressed.
The starch acts as the emulsifier. That is why you save pasta water, why you finish the pasta in the pan rather than the pot, and why you toss aggressively rather than gently stirring. Carbonara, cacio e pepe, and aglio e olio are all emulsions first and recipes second.

Undercook the pasta by two minutes and reserve a cup of the water.
