Make the bbq glaze: whisk the glaze ingredients in a small pan and simmer 2–3 minutes until glossy and slightly thickened. Set aside — it goes on late.

Heat to medium-low, then, brush generously with the bbq glaze and return to the heat for the final 3–5 minutes until lacquered and bubbling — sugary glazes burn if applied earlier.
