Method
1
Whisk flour, sugar, baking powder, and salt. In another bowl whisk yolks, milk, melted butter, and vanilla, then fold into the dry mix — lumps are fine.
2
Beat the egg whites to soft peaks and fold them in gently in two additions.
Why this works
The whites are the difference between a waffle and a sad pancake grid — fold, don't stir.
3
Cook in a hot, buttered waffle iron until steam slows and the shell is deep gold, 4–5 minutes each.

4
Hold finished waffles directly on the oven rack at 90°C — never stacked, or they steam soft.
Why this works
Stacking is how crisp waffles die.
5
Serve with strawberries and maple syrup.

Chef's notes
Taste before serving and adjust salt and acid — the last 30 seconds of seasoning matter more than any single ingredient.
Afterwards
Keep, reheat & pair
Storage
Best fresh; components keep 2 days refrigerated.
Freezing
Most breakfast bakes freeze well for 2 months; assembled plates don't.
Reheating
A low oven (150°C, 8–10 minutes) revives baked things; a nonstick pan over medium-low beats the microwave for anything with a crisp edge.
Make ahead
Prep components the night before — batters rest happily overnight in the fridge, and toppings can be portioned into jars.
Wine pairing
Coffee or fresh juice — it's breakfast.
Beer pairing
It's breakfast — coffee. But a mimosa never hurt a weekend.
