Method

Knead flour, eggs, milk, sugar, yeast, and salt to a smooth elastic dough, 8 minutes (a stand mixer earns its keep here).

Add the butter a piece at a time, kneading each fully in — 10–12 slippery minutes until glossy and pulling cleanly off the bowl.

It WILL look like a mistake mid-way. Keep kneading; the dough absorbs all of it and turns to satin.

Rise 1.5 hours, then overnight in the fridge (the cold firms the butter for shaping).

Shape into 8 balls in a loaf tin; proof until pillowy, 2–3 hours. Egg-wash and bake at 180°C to deep mahogany and 90°C internal, 30–35 minutes.
