Whisk buckwheat, water, egg, and salt; rest 2 hours minimum (overnight is Brittany-standard) — buckwheat has no gluten and needs full hydration.

Swirl thin crêpes in a buttered pan over medium-high, 2 minutes until lacy-edged; flip.

The complète: cheese, ham, and a cracked egg in the center; lid on 2–3 minutes until the white sets; fold the four edges into a frame around the yolk. Serve immediately.
