Three ingredients, one emulsion: pecorino, toasted black pepper, and starchy water whipped into cream by motion alone. Rome's minimalist masterpiece and stern teacher.

Yield: For 200 g of pasta
Prep checklist
Pecorino Romano — finely grated, room temperature
Whole Black Peppercorns — toasted, coarsely cracked
Spaghetti — or tonnarelli
Butter — training wheels — traditional Romans abstain
Toast the cracked pepper in the dry pan 1 minute until it smells like incense.
Cook the pasta in HALF the usual water — you want it extra starchy — until 2 minutes shy of al dente.
💡
Concentrated pasta water is the emulsifier. This one change doubles your success rate.
Make a paste: pecorino mashed with a few spoonfuls of the starchy water until like wet sand, then thick cream.
Pasta into the pepper pan with a ladle of water; finish cooking 2 minutes. OFF the heat, wait 30 seconds (crucial — too hot clumps cheese), add the pecorino cream, and toss furiously until glossy.
Taste before serving and adjust salt and acid — the last 30 seconds of seasoning matter more than any single ingredient.

Keep, reheat & pair
Storage
Airtight jar in the fridge, 3–5 days. Press plastic wrap onto the surface of starch-thickened sauces to stop a skin forming.
Freezing
Most sauces freeze 2–3 months; freeze in ice-cube trays for single portions. Emulsified butter/egg sauces don't freeze — they break on thawing.
Reheating
Reheat gently over low heat, whisking; butter- and egg-based sauces split when boiled. Loosen with a spoonful of warm water or stock.
Make ahead
Most sauces keep 3–5 days refrigerated and freeze in ice-cube trays for instant single portions. Emulsified butter sauces are best made within the hour.

Troubleshooting
Cheese clumped into chewing gum. The pan was too hot. Let it cool 30–60 seconds before the cheese goes in; rescue clumps with hot water and violent tossing.
