Simmer water, piloncillo, cinnamon, cloves, and orange peel 5 minutes until the sugar melts into spiced syrup.

Why this works
Piloncillo's molasses smoke is the flavor — plain sugar makes sweet coffee; piloncillo makes café de olla.
