Method

Soften the shallot in oil 2 minutes, then toast the couscous in the fat 2 minutes until it smells nutty.

Toasting the dry grain is the pilaf signature — it deepens flavor and keeps the grains separate.

Add hot stock at 1 : 1 (grain : liquid) with the salt. Cover, kill the heat, and steep 5 minutes.

Rest 5 minutes off the heat, lid on — the rest finishes the steam. Then fluff with a fork, never a spoon.

Finish: raisins, toasted almonds, and a fork-fluff. Season and serve.
