Simmer the soaked dal in salted water until fully tender, 45–60 minutes (or 25 in a pressure cooker).

In butter, fry the ginger-garlic paste 2 minutes; add tomatoes and spices and cook down 10, until the fat separates at the edges — the Indian doneness signal for any masala.

"Fat separating" looks like a glossy rim around the paste. It means the raw tomato has fully cooked out. Wait for it.

Add the dal with its liquid; simmer LOW, mashing occasionally against the pot, 30+ minutes — time is the luxury ingredient. Cream and kasuri methi at the end; butter on top, cilantro, warm naan.
