Method

Quick ginger brew: simmer grated ginger and honey in the water 3 minutes; strain and chill (or use ginger beer and skip).

Ice, ginger brew, lime squeezed in — then float the dark rum over the back of a spoon so it broods on top. Stir at first sip, not before.
