Beef Stock — the best you have
Beef Stock — for the espagnole base
Make an espagnole: browned mirepoix, peanut-butter roux, tomato paste, and half the stock, simmered 1 hour and strained.
Combine the espagnole with the remaining stock and reduce at the laziest possible simmer until halved in volume and glossy — 2.5–3.5 hours, skimming faithfully.
💡
The skimming is the craft: every pass removes fat and impurities that would cloud the finish. A demi should be nearly translucent mahogany.
Strain through fine mesh. It should coat a spoon like warm honey and set to jelly when chilled — that jiggle is concentrated gelatin, the whole point.
💡
Freeze in ice-cube trays. One cube transforms any pan sauce for the next three months.
Taste before serving and adjust salt and acid — the last 30 seconds of seasoning matter more than any single ingredient.

Keep, reheat & pair
Storage
Airtight jar in the fridge, 3–5 days. Press plastic wrap onto the surface of starch-thickened sauces to stop a skin forming.
Freezing
Most sauces freeze 2–3 months; freeze in ice-cube trays for single portions. Emulsified butter/egg sauces don't freeze — they break on thawing.
Reheating
Reheat gently over low heat, whisking; butter- and egg-based sauces split when boiled. Loosen with a spoonful of warm water or stock.
Make ahead
Most sauces keep 3–5 days refrigerated and freeze in ice-cube trays for instant single portions. Emulsified butter sauces are best made within the hour.

Is store-bought demi-glace concentrate cheating?
It's triage, and decent triage. But one afternoon of the real thing will recalibrate what you think sauces can taste like.
