3 steps
Method
1
Wet your palms, salt them (this seasons the surface), and cradle a handful of WARM rice — warm rice binds; cold rice crumbles.
💡
The salt-palm move is the whole seasoning for the outside. Old technique, zero effort.
2
Press a thumb-well, tuck in an umeboshi or a pinch of furikake, cap with rice, and press into a triangle: three rotations, firm but not compacted.
3
Band with nori (added at eating time if packing ahead — crisp nori is a civil right), scatter furikake and sesame.

Notes
Taste before serving and adjust salt and acid — the last 30 seconds of seasoning matter more than any single ingredient.
Afterwards
Keep, reheat & pair
Storage
Airtight container, 3 days.
Freezing
Usually better fresh.
Reheating
A hot dry pan or 180°C oven re-crisps almost anything in 3–5 minutes.
Make ahead
Portion into grab-and-go containers; most keep 3 days.
Wine pairing
Whatever's open.
Beer pairing
Whatever's cold.
