Mignonette first (it improves over 30 minutes): vinegar, shallot, pepper. Done.

Shuck: fold a towel around the oyster cup-side down, work the knife tip into the hinge, twist until it pops, slide along the top shell, and free the meat from the bottom — keeping every drop of liquor.

The twist at the hinge is leverage, not force. If you're straining, reset the angle.

Serve on crushed ice with mignonette and lemon. One spoon-tip of mignonette per oyster; slurp from the wide end; keep the liquor.
