Method

Start the potatoes in COLD salted water; simmer until a knife meets no resistance, 18–20 minutes. Drain and steam-dry 2 minutes in the hot pot.

Cold-water start = even cooking. Steam-drying = mash that absorbs butter instead of water.

Rice or mash while hot; fold in butter first, then warm milk in stages. Never a blender or processor — sheared starch is wallpaper paste.
