Boil the potatoes until tender, 18 minutes; keep warm under a towel.

Scrape over split potatoes; cornichons, pickled onion, and prosciutto alongside; cracked pepper over. Repeat in waves until surrender.

The cornichons aren't garnish — their acid resets the palate between rounds of molten cheese. Alpine wisdom.
