Dry the fillets, season, and dust with flour — a veil, not a coat.

Cook in half the butter over medium-high, 2–3 minutes per side, until gold-edged and just flaking. Plate.

Wipe the pan, add remaining butter, and let it foam then brown to hazelnut — 90 seconds. Off heat: lemon juice (it will roar), parsley, and straight over the fish.
