Method

Roast the nuts at 170°C until fragrant and a shade darker, 10–12 minutes.

Toss HOT nuts with melted butter, rosemary, sugar, cayenne, and salt — heat blooms the rosemary and melts the sugar into a glaze.

Serve warm if you can: warm nuts read as twice as fragrant. Re-warm 5 minutes before guests arrive.
