Method

Steam the artichokes over lemony, bay-scented water, covered, until an outer leaf pulls free without a fight — 30–40 minutes.

Melt butter with garlic and lemon juice.

The ritual: pull a leaf, dip, scrape the flesh off with your teeth, discard, repeat inward. At the fuzzy choke, scrape it off with a spoon — beneath is the heart, which you've earned. Quarter it into the remaining butter.
