In an ovenproof skillet, cook sugar to amber caramel; off heat, whisk in the butter (it will complain).

Pack peeled apple halves upright in tight concentric circles — they shrink; overcrowd on purpose. Simmer in the caramel 10 minutes.

Blanket with pastry, tucking the edges down inside the pan. Bake at 200°C until deep bronze, 30–35 minutes.

Rest 10 minutes exactly — longer glues, shorter floods. Plate over the pan, breathe, flip. Flaky salt on the caramel.
