Why this works
Concentrate is triage, not cheating — it brings the gelatin and depth of hours in a teaspoon. Homemade demi (see the sauce library) remains the summit.

Reheating
Reheat gently over low heat, whisking; butter- and egg-based sauces split when boiled. Loosen with a spoonful of warm water or stock.
