Method

Score the fat edge every 2 cm (stops curling), pound lightly, season, and bread: flour, egg, panko pressed on thick.

Fry at 170°C, 3–4 minutes per side, to deep gold and 63°C internal (modern safe pork = juicy, blush-pink ok). Rest 3 minutes on a rack.
