Syrup: 50 g sugar + 100 ml water, simmered 2 minutes. Frangipane: beat butter, sugar, almond flour, egg, and vanilla to a paste.

Split the croissants; brush the insides generously with syrup, spread frangipane inside, close, and crown with more frangipane and flaked almonds.

The syrup soak is why bakery almond croissants are moist inside — day-old pastry drinks it like a sponge.

Bake at 180°C until golden and the frangipane sets, 15–18 minutes. Snow with powdered sugar; serve warm and accept that you now own this skill.
